Meatball Ingredients:
1 lb ground beef
¼ cup Italian seasoned breadcrumbs (plain will also work)
⅓ cup yellow onion, grated
2 tbsp milk
1 egg
½ tsp salt
1 tsp onion powder
1 tsp garlic powder
Pepper to taste
2 tbsp seltzer water
Sauce Ingredients:
1 cup orange marmalade
¾ cup barbecue sauce
1 ½ tbsp soy sauce
Instructions:
Preheat the oven to 400 degrees Fahrenheit.
In a large bowl, combine all meatball ingredients except for the seltzer water. Mix it all together with a wooden spoon or your hands.
Form a well in the center of the meat mixture and pour the seltzer water into it. Mix to combine again.
Use your hands to form the meat into about 30 meatballs. Place the meatballs on unlined cookie sheets (about 15 on a regular sheet), and bake for 15-20 minutes or until the meatballs are cooked through.
Take the meatballs out of the oven and allow them to rest for 10 minutes while you prepare the sauce.
To make the sauce, place orange marmalade, barbecue sauce, and soy sauce in a medium pan and whisk together.
Place the pan over medium-high heat, and bring the sauce to a boil. Allow the sauce to simmer for 10 minutes, stirring occasionally.
When the sauce is done, gently drop a few meatballs at a time in the sauce. Use a spoon to mix them around, covering them in sweet and sour sauce. Remove to a serving platter, then repeat until all meatballs are dressed.
